Berry Ice Cream
Original recipe here
- 2 c fresh or frozen mixture of berries, stemmed (sliced, if needed)
- 1 c sugar
- 1 c whole milk
- 2 c heavy cream
- 1 t vanilla extract
Make sure your berries are chopped/sliced in small enough pieces to be enjoyable when eaten frozen. For fresh strawberries: Slice and stir with 1/4 c of the sugar. Allow to sit and macerate for 2 hours. Whisk together milk and sugar until sugar is dissolved. Stir in heavy cream and vanilla. Combine well. Pour mixture into ice cream maker, following manufacturer’s instructions. During last 5-10 minutes of churning, add the berries (including juices, if any.)
