This pasta salad is amazing – particularly the dressing. I’m going to make the dressing to use on other salads!
Sun Dried Tomato Pasta

- 1/4 c Trader Joe’s sun-dried tomatoes in oi
- 2 T red wine vinegar
- 6 T olive oil
- 1/2 T minced garlic
- 1 t capers, drained
- Kosher salt, to taste
- 3/4 t freshly ground black pepper
- 1/2 lb mini bow tie pasta
- 1/2 lb cherry tomatoes, halved
- 1/2 lb fresh mozzarella, diced
- 1/2 c kalamata olives, pitted and diced
- 1/2 c grated Parmesan
- 1/2 T dried basil leaves or 1/4 c fresh basil leaves, julienned
Combine sun-dried tomatoes, vinegar, olive oil, garlic, capers, 1-2 teaspoons salt, and pepper. Using a food processor or blender stick, process until almost smooth. Cook the pasta until al dente. Drain, then toss with the dressing. Add cherry tomatoes, mozzarella, olives, Parmesan and basil to the salad. Combine well and serve at room temperature.
