Orange and Ginger Tofu

- 16 oz broccoli florets
- 1 c orange juice
- 2 T cornstarch
- 1/4 c brown sugar
- 1 T soy sauce
- 1 t ground ginger
- 2 T minced garlic
- 1 t orange zest
- 16 oz baked tofu (use my recipe here)
Cook broccoli until bright green and tender. Mix the cornstarch with a couple tablespoons of the orange juice in a small bowl and set aside. Mix remaining orange juice, brown sugar, soy sauce and orange zest to dissolve the sugar. Heat ginger and garlic in olive oil over medium heat, stirring constantly, until fragrant. Add the broccoli and orange juice mixture to the pan and bring to a simmer. Add the cornstarch mixture and stir constantly until thickened. Serve over rice.
