This pancake recipe levels up on the fun factor: Just use a cake mix as part of your base and let your imagination go! Chocolate pancakes? No problem. Gingerbread? Sure! Lemony-springtime? Of course.
Gingerbread (or your favorite flavor) Pancake

- 1 dry cake mix – your favorite flavor
- 2 c low-fat milk
- 1/2 c flour
- 1/4 c canola oil
- 2 eggs
Combine all ingredients to make your pancake base. Cook as you normally do for pancakes! These freeze nicely if you put a piece of parchment between each pancake.
