We need to get back in the habit of eating a more plant-based diet. This was a delicious and easy way to enjoy lots and lots of greens.
Sesame Noodles and Greens

- 8 oz spaghetti
- 1 t safflower oil
- 16 oz mustard greens, cleaned and stemmed (or any type of greens you prefer)
- 1/4 onion, diced
- 1 clove garlic, minced
- 1/4 c soy sauce
- 2 T honey
- 2 T rice wine vinegar
- 2 t dark sesame oil
- 2 T safflower oil
Combine soy sauce, honey, rice wine vinegar, sesame oil and 2 tablespoons safflower oil in a small bowl. Mix and set aside. Cook spaghetti to al dente. Meanwhile, heat 1 teaspoon grapeseed oil in a large saute pan over medium heat. Add diced onions and greens. Saute for 7-8 minutes until they begin to soften. Add minced garlic and cook for 2 minutes more. Remove from heat. When pasta is cooked, remove from water and add drained noodles to mustard greens. Add the soy sauce mixture and toss to coat all the noodles and greens. If desired, sprinkle with sesame seeds.
