This can be made with pork or the other white meat (the original one, that is), chicken.
Pork and Olive Quesadillas

- 1 c leftover shredded pork or chicken
- 1 c chopped fresh spinach
- 1 oz queso fresco
- 12 kalamata olives, chopped
- 4 (8-in.) tortillas
- 1/4 c plain 2% reduced-fat Greek yogurt
Cook meat over medium heat 5 minutes or until warmed through. Add spinach, queso fresco and olives; cook 2 minutes. Remove mixture from pan. Wipe pan clean with paper towels. Spoon about 1/3 c meat mixture evenly over half of each tortilla. Fold tortillas in half over filling. Add 1 1/2 t oil to pan. Place 2 quesadillas in pan; cook 3 minutes on each side or until browned. Repeat procedure with remaining mixture and tortillas. Cut into wedges and serve with yogurt.
