Another week, another batch of treats for the class Kelly teaches. I’m working through a hoarder-worthy stash of cinnamon chips in my freezer (6 bags at one point…and most recipes only use 1/2 bag).
Oatmeal Coconut and Cinnamon Chip Cookies

- 1 c butter or margarine
- 1 c brown sugar, packed
- 1 c granulated sugar
- 2 eggs
- 2 t vanilla
- 1 t baking soda
- 1 t baking powder
- 1/2 t salt
- 2 1/2 c flour
- 1/2 c shredded, sweetened coconut
- 3/4 c cinnamon chips (1/2 bag)
- 1 c quick oats
Preheat oven to 350F. Beat together butter, sugars, eggs, and vanilla until light and fluffy. Mix baking soda, baking powder, salt, and flour together. Add to wet ingredients and stir until combined. Fold in coconut, cinnamon chips, and oats with wooden spoon. Drop tablespoonfuls onto cookie sheet. Bake 9-11 minutes, until edges of cookies are slightly browned. won’t feel/look done in the middle. Let cool for 10 min on baking sheet, then transfer to cooling rack to cool completely.
