I made this sweet and spicy snack mix the other day. Gosh is it ever good! The serving size, 3 T, is perfect for staving off hunger at just 130 calories. (Pretty sure I cut this one out of Cooking Light magazine.) For those who live near a store with bulk goods (like Sprouts), this is a perfect recipe to stock up on just the ingredient quantities you need.
Sweet Chipotle Snack Mix
- 1/4 c sugar
- 1 t salt
- 1 t ground chipotle chile pepper
- 1/2 t ground cumin
- 1/2 t chili powder
- 1 large egg white
- 1 c slivered almonds
- 1 c unsalted cashews
- 1 c unsalted pumpkinseed kernels
Preheat oven to 325F. Combine first 5 ingredients in a small bowl. Stir with a whisk. Place egg white in a large bowl and whisk until foamy. Add the almonds, cashews and pumpkinseeds. Toss well to coat. Sprinkle with spice mixture. Toss well to coat. Spread nuts in an even layer on a baking sheet lined with parchment paper (note: You absolutely want parchment paper or cleaning your pan will be a NIGHTMARE.) Bake for 15 min, stirring once. Turn oven off. Remove pan from oven, stir mix and return pan to oven for an additional 15 min (leave oven off). Remove pan from oven and place on a wire rack. Cool completely. Store snack mix in an airtight container for up to 2 weeks.
