This couldn’t be a simpler supper. When you have some free time, throw several sweet potatoes in the oven and roast them. Wrap tightly in plastic wrap and store in the refrigerator for use later – like making this on a night when you’re pressed for time.
BBQ Stuffed Sweet Potato
- Baked sweet potato
- Meat of choice
- BBQ sauce
- Beans
Mix the fixings and stuff in a warm baked sweet potato. Our favorite version is to use leftover BBQ beans from our favorite joint (Lockhart), combined with bits of Greenberg smoked turkey we’ve saved in the freezer. Delicious!
