A coworker gave me a quart-sized bag full of okra. That was reason enough to make homemade okra with tomatoes for an easy veggie Sunday supper.
(Yes, we still have our meals prepped for us, but that’s a Monday through Friday thing.)
Preparing a perfect bowl of okra and tomatoes is very easy.
First: Chop the okra into large pieces and soak in vinegar for 30 minutes. This reduces the slimy-ness of the okra.
Second: Rinse the okra in cold water and drain thoroughly. Toss in a preheated and oiled wok. Cook for 2-3 minutes.
Third: Add two cans of your favorite diced tomatoes. I used Rotel for a little extra spice. If you want even more flavor (which we did), add 1/2 tablespoon of minced garlic. Turn the heat to low and cook for 20 minutes.
Fourth: ENJOY!!
