I may not be cooking dinner (or breakfast or lunch) very often anymore, but I’m still baking up a storm. It’s a fun way to be creative and bless others with calories. (!)
One of my favorite recent purchases is a mini-bundt cake pan. Muffins and cupcakes now look so fancy. I can barely stand the cuteness!
Blueberry Lemon Mini Bundt Cakes
- Lemon cake mix
- 1 cup fresh blueberries, washed and dried
- Vanilla bean frosting
Prepare cake according to instructions. Fold in blueberries as a final step. Grease and fill mini bundt cake pan. Baking time will be in accordance with standard cupcakes. After cupcakes cool, frost!
