I posted a photo several weeks ago of some amaaaaaaazingly tasty nachos Kelly and I enjoyed for dinner. I mentioned the nachos were healthy and promptly received several messages that said, “Oh really?”

Loaded Chorizo Nachos
Original recipe here
- 1 2/3 c cooked chorizo
- 1 c drained canned unsalted pinto beans
- 48 tortilla chips
- 1/2 c reduced-fat colby-Jack cheese, shredded
- 1/2 c queso fresco, crumbled
- 1/4 c chopped green onions
- 1 c chopped tomato
- 1/4 cchopped fresh cilantro29
- 1 ripe avocado, peeled and chopped
- 1 jalapeno pepper, thinly sliced
- 1/2 t kosher salt
Layer ingredients and warm under broiler until cheese is melted. (See – I told you it was easy!)
This recipe makes 4 servings at just 450 calories each!
