Ah, overfull pantries. You can drive a person crazy with the amount of stuff you have inside, yet you can save a wife’s life when she gets home late at night and needs to make dinner.
And pantries contain all sorts of things that are interesting to furbabies. Certain furbabies will even supervise your cooking….if you let them.
Here’s a simple recipe that took 10 minutes, start to finish:
- 3/4 c jalapeno honey pork tenderloin
- 1 T wok oil (or in my case, bacon fat)
- 2 c cooked rice
- 2 eggs
- 1 pkg frozen broccoli
- 1 T sriracha sauce
Heat the oil in a large wok. Add meat and stir fry for 4 minutes, until warmed through. Add cooked rice and cook for 3 minutes. Make a well in the center, add cracked eggs. Cook eggs until scrambled (about 2 minutes), then stir throughout the rice and pork mixture. Serve with soy sauce (try the Tabasco brand!) and broccoli.
To make the broccoli, follow package instructions for preparation. Toss with sriracha sauce and spread on foil-lined baking sheet. Roast in 450F oven for 5 minutes.
