Just what the doctor ordered for a refreshing summer treat. I’m going to give you the recipe the way I wish I’d made it, rather than the way the recipe I followed indicated.
The original recipe wasn’t sweet enough – at least not ideal if you happen to have a watermelon that isn’t super-juicy-sweet. Plus there are times that you don’t want an adult mojito. You simply want a refreshing summer drink.
- 1/2 small seedless watermelon, cut into chunks
- 1 bunch mint, tough stems removed
- 1 T super-fine sugar
- 1 lime, cut into wedges
- 1 3/4 c limeade (click the link for a good homemade recipe) *
Puree watermelon in food processor. Work in batches if necessary. Pour through a fine-mesh sieve into a liquid measuring cup, pressing on solids to extract as much liquid as possible. (This should produce about 3 cups). Discard solids. In a large container, combine mint, sugar, and lime. With the back of a wooden spoon, crush mint and lime until sugar is dissolved. Add watermelon juice and limeade. Fill container with ice, stir to combine. Serve over more ice with mint springs for garnish.
* If you want to make an adult mojito, substitute white rum for the limeade
