We love s’mores.
We love them when we’re camping. We love them as a party dessert.
It’s pretty safe to say we’d eat s’mores more often if they were easy to make without a fire. I’ve tried making them in the microwave, but that just results in an explosively puffy marshmallow.
So s’mores have been relegated to camping and parties. Until now. {Thank you, Pinterest.}
Basic ingredients (seriously – you don’t know what goes into a s’more?!?):

Large marshmallows

Chocolate (I experimented with dark chocolate and Rolos)

Digestive biscuits (graham cracker like cookie from the UK – these hold up better than graham crackers)
Lay the cookies on a baking sheet. Cut the marshmallows in half. Place each half, cut side down, on a cookie.
Adjust baking racks so they are two inches below the top heating element in your oven. Turn the oven on to broil and put marshmallow-laden cookies under to brown.
Do.not.walk.away.from.the.oven.
Remove the browned marshmallowy cookies from the oven and top with a chocolate of your choice. If you’re going to use a Rolo, soften it in the microwave (low power) for a few seconds first.
