I use ice cube trays all the time, just not for making ice. Lately my trays have held:
- Chopped chipotle peppers for easy-to-use 1 T. portions
- Leftover wine to use as a soup/stew flavor boost
But I’ve never used ice cube trays to freeze cookie dough. Until now.
Placing cookie dough creates smaller, but consistently sized cookies. Plus it’s much easier to fill and freeze dough in an ice cube tray than it is to drop dough onto waxed paper covered cookie sheets.
I highly recommend spraying the trays with a bit of cooking spray first. It makes it easier to remove the dough later on.
After the dough has frozen solid (an hour or two later), use a butter knife or a small spoon to pop the dough squares out.
Toss the dough squares into a plastic freezer bag, remove the air (use a straw to suck out excess air), label with baking directions and put back in the freezer.
Now it’s easy to bake a cookie when you want a cookie. Or to bake two dozen if your church puts out a call for cookie contributors.
