Well, actually it’s a salad. But 1) you could eat in a wrap and 2) this is the last of my cookbook recipes!!! Woo-to-the-hoo!
I’m having a moment.
I whipped out this quick chicken salad recipe for our staycation group to enjoy as part of a picnic lunch on our day in Fort Worth. It came from our homemade Hayley Family Camping Cookbook. Tried and true, and still as delicious as ever.
Best Chicken Salad Ever
- 1 5oz can chunk chicken, drained and flaked
- 2 T mayo
- 1 large apple, cored and diced
- 1 c chopped pecans
- 1/2 stalk celery, chopped
In a large bowl, mix all ingredients. Season with salt and pepper to taste. Chill until serving. (And if you’re enduring a hot Texas summer, keep this on ice until you’re ready to eat!)
