We’re on vacation (staycation), it’s hot and all we want are light, easy meals. My Cuisinart recipe book had just the thing to take in packed lunches: hummus.
Quick, easy to make and delicious!!
Hummus
- 1/4 c fresh Italian parsley leaves
- 1/2 t lemon zest
- 1/2 t kosher salt
- 1 garlic clove
- 2 cans chickpeas, drained
- 2 T tahini
- 2 T fresh lemon juice
- 1.5 T water
- 1/2 t ground cumin
- 2 T extra virgin olive oil
Process parsley, lemon zest, salt and garlic together, about 6 seconds. Scrape bowl and repeat. Add remaining ingredients and process until smooth, about one minute. Scrape bowl and process again to fully incorporate all ingredients.
Was it good? Yes – completely gone within two days. Deeeee-lish.
