Two women, tired from attending a scrapbooking convention, and one man, tired from playing golf and waiting in an eternal line to renew his driver’s license, were in no mood to do a great deal of cooking.
Add in temperatures in the upper 90s and you have the perfect day for a pasta salad. Fortunately, Essence of Kansas – Taste Two, was ready to deliver a quick and tasty salad for just such a day.
- 1 12-oz package mixed pasta
- 1 1/2 c chopped chicken breast
- 3/4 c thinly sliced and quartered cucumber
- 1 c quartered seeded cherry tomatoes
- 1/4 c chopped green onions
- 1 c light Italian salad dressing
- 1/4 c light mayonnaise
- 1 T prepared mustard
- 1 t dillweed
Prepare pasta using package directions; drain. Combine with chicken, cucumber, tomatoes and green onions in a large bowl. Whisk Italian dressing, mayonnaise, mustard and dillweed in bowl until smooth. Pour over pasta mixture, tossing to coat. Chill, covered, until serving time. Garnish with additional cucumber or tomatoes.
