I was serious last weekend when I promised The Boy that the end of the holiday season meant a return to proper cooking by his wife.
To prove my love for all things Boy (including his stomach), I whipped up a fancy-pantsy sandwich for his brown bag lunch.
On the way home I asked him what he thought of his sandwich. His answer: That was an amazing sandwich. It’s the best sandwich I’ve had in a long time. Maybe ever.
Consider yourself warned.
- 1 soft onion roll
- 1 tablespoon spicy brown mustard
- 2 ounces thinly sliced roast beef (or roasted turkey)
- 2 thin slices tomato
- Several slices dill pickle
- 1/4 cup store-bought French-fried onions
First, breathe a sigh of relief that this sandwich will not give you dragon-breath, despite all of the onions. Then slice your rolls in half and spread each half with mustard.
Add roast beef and dill pickles.
Top with tomato then French-fried onions. It’s important to stack in this order so the tomato juices don’t soggify (ok, not a word, but you understand what I mean) the bread.
Munch and savor each bite. And wish that you’d made two sandwiches just for yourself.
