More leftovers+fresh produce wizardry. Thank heavens it’s cold enough to enjoy a nice steaming bowl of spicy soup.
Quick and Easy Tortilla Soup
Staples from the Pantry
- 14 oz low-sodium beef broth
- 14 oz low-sodium chicken broth
- 14 oz stewed tomatoes
- 14 oz Rotel
- 14 oz tomato soup
- 2 t. cumin
Fresh Produce
- 2 small zucchini, chopped
- 1 yellow squash, chopped
- 2 t. chopped garlic
- 1 bunch cilantro, roughly chopped
Leftovers
- 1 lb. cooked chicken
- 1 c. onions and bell peppers (I saved the fajita grilled vegetables from our party and used those. If you don’t have leftovers, you could chop a small onion and bell pepper)
Combine all ingredients and bring to a boil. Reduce heat and let simmer for 30 minutes. Serve steaming hot, topped with a sprinkling of cheddar cheese and crushed tortilla chips.
