We have food leftover from the Hayley Party (of course). Food we made, food we bought and food that was brought. The challenge – and fun – is figuring out how to use it all without letting any go to waste.
The theme of the evening was Tex-Mex. We provided fajitas, guests brought everything else. I greatly regret not taking photos of the jalapeno poppers that I made. It was a freestyle recipe – made up on the spot – and wildly successful. I suppose I’ll have to make them again and document it for the blog. {Lesson learned!}
Anyway, the point of this post is reusing leftovers. I’m thinking as we pull out and make meals that are not fajitas, I’ll share the way we twist and tweak the food for new meals.
I had sweet potatoes from our CSA awaiting some delicious use. Add to that leftover sour cream, mixed with cumin, a dash of leftover pico de gallo and a side of leftover jicima salad (must get the recipe from my friend P!!) and you have a wonderful vegetarian Tex-Mex lunch:
