Next up in my cook-my-way-through-my-collection was a cookbook I picked up while in college: Fun and Easy Mexican Cooking.
I was obviously in a mood for spice last week, because we actually had a lot of flavorful food choices on the menu. However, this recipe appealed to me with its focus on fish. I don’t know if I’d call dinner fun, but it was definitely easy (and tasty)!
Tuna
- 1 t. chili powder
- 1/2 t. garlic salt
- 1/2 t. cumin
- 2 (4-6 oz) fresh tuna steaks
Heat grill. In small bowl, combine chili powder, garlic salt and cumin. Mix well. Rub mixture on both sides of each tuna steak. When ready to grill, carefully oil grill rack. Place tuna on gas grill over medium-low heat or on charcoal grill 4-6 inches from medium-low coals. Cook 10 to 14 minutes or until fish flakes easily with fork, turning over once or twice.
Topping
- 1 medium avocado
- 2 t. lime juice
- 1/4 c. chopped fresh cilantro
Peel and chop avocado. Mix with lime juice until smooth. Stir in cilantro.

Last night Stacie said we should grill some fish this week. This looks like a tasty recipe… I'll even try the avocado just for you.
I have another good one – just didn't take photos because we liked it too much!! Next time I prepare it I'll post it on the blog.
Ok, we tried it. I grilled the tuna a little too long, so mine was a little bit tough.
We may have had too much cilantro mixed with the avocado, because the guac berry flavor got a little bit overwhelmed. The flavor was really good, though.
I'm sorry it wasn't perfect. You'll simply have to try again!
