Snow=Comfort Food

Who would have thought that we’d have snow in North Texas in early December?

Growing up in Kansas, it seemed that the first snow would arrive on Halloween – ruining my costume plans every year.

That’s why I moved to Texas.

Well sort of. I actually moved to Texas after returning to the States from Kenya. The midwest was a bit too chilly for my bones and I’d always loved the Dallas skyline at night.

But that’s another story…

The story today is that it snowed in Dallas. On December 2nd. That’s just very unusual. My little point-and-shoot (while a fantabulous gift from The Boy), couldn’t capture the wonder of the morning flurries:


The snow didn’t last, of course, but it was still very chilly. It was the type of evening that makes a kitty figure out a way to make Daddy’s lap work, even when he’s sitting in a less-than ideal position.

It was the type of night, in fact, that demanded comfort food. We wanted (somewhat) healthy, spicy and tasty. With that in mind, I rummaged through the pantry and pulled this together:

Spicy cornbread – cornbread mix with chopped chipotle peppers and a scant 1/4 cup of shredded cheddar cheese
Poultry broccoli – leftover shredded chicken and turkey, combined with a bechamel sauce (ok, low-fat, reduced-sodium cream of chicken soup thinned with skim milk), black olives and four large broccoli crowns (chopped and steamed)
Delicious!

    Snow is Dallas, WOW! Winter has been slow in coming here. We had a few, very few flakes, on the grass this morning, the first since the snow showers on Oct. 10. But it will stay below freezing for the next few days.

    Okay, the first guy doesn't have a chance.
    We had a warning broadcast on morning news for drivers to be extra careful on the icy streets downtown.
    Confession – major water main break in early hours. 10 deg. wind temperature does make for a chilly morning.
