I’m getting used to eating dinner at 8 pm. We’re just busy, busy, busy with work and home – there’s no time to sit and certainly no time to eat.
The weekend was no exception. By late afternoon on Sunday, Kelly looked at me and said:
Enough!!!
You’ve been busy-busy-busy all day.
You haven’t taken any time to rest.
I don’t want you to do one more thing…
…except make spaghetti for dinner.
You know, he was right. There’s hardly anything more restful then sitting with your feet up, eating a nice homecooked meal!
Shannah’s Turkey Spaghetti
- 1 lb ground turkey
- 1 16 oz jar of your favorite spaghetti sauce
- 1 jar sliced mushrooms (fresh if you have time to go shopping!)
- 2 large cloves garlic, minced
- 1 medium onion, coarsely chopped
- Dried thyme to taste (or fresh…see note above!)
- Whole-wheat spaghetti noodles
Brown and drain turkey. Add onion and garlic, cook until onions are soft. Add pasta sauce, mushrooms and thyme. Cover pan and turn heat to low; simmer 30 minutes. Cook pasta according to package instructions. Drain and add to spaghetti sauce or longer. Mix until pasta is thoroughly coated with sauce. Serve and enjoy!
