Recipe | Greek 7-Layer Dip

One of the husband’s favorite summer meals is 7-layer salad. And we both really love 7-layer dip (though maybe not the calories). Likewise, we we both really love Greek salads in the summer so it seemed logical to give Greek 7-layer dip a try.

It was a wise decision.

Greek 7-Layer Dip

  • 8 oz hummus
  • 1 c 0% fat Greek yogurt
  • 1 clove garlic, finely minced
  • 1 t chopped fresh dill
  • Juice of 1/2 lemon
  • Pinch kosher salt
  • Freshly ground black pepper
  • 2 T red onion, minced
  • 1 c cucumber (about 1/2 large), diced
  • 1 c tomato, seeded, diced
  • 1/4 c crumbled feta cheese (I use queso fresco)
  • 1/4 c Kalamata olives, sliced

Combine yogurt, garlic, dill, lemon juice, salt and freshly ground pepper. Set aside. In an 8”x8” dish, layer hummus, yogurt mixture, red onion, cucumber, tomatoes, feta and olives. Serve with dippers.
