A friend posted this recipe – I gave it a try and have been addicted ever since.
Chia Seed Pudding
- 2 c coconut milk
- 2 c non-fat, plain Greek yogurt
- 2 T honey
- 2 T pure maple syrup
- 1 T vanilla paste
- Pinch of sea salt
- 1/2 c chia seeds
- Toppings of your choice: Fruit, nuts, coconut
In a medium mixing bowl, whisk milk, yogurt, honey/syrup, vanilla and sea salt together until combined. Stir in chia seeds. Cover bowl with plastic wrap and refrigerate overnight. Stir a couple of times to prevent chia seeds from clumping at the bottom. The next day, divide the pudding evenly into 5 containers. Before serving, add toppings.
