Recipe | Kimchee Fried Rice

This is an amazing stir-fry. Addictively amazing. You must make it.

Kimchi Fried Rice

  • 1.5 t toasted sesame oil
  • 2 lightly beaten large eggs
  • 1.5 T toasted sesame oil
  • 1 c chopped green onions
  • 4 minced garlic cloves
  • 3/4 c chopped kimchi
  • 2 c cooked farro or cooked brown rice
  • 8 oz fresh spinach
  • 1.5 c shredded roast chicken
  • 1/2 c thawed frozen green peas
  • 1/4 c kimchi juice
  • 2 T reduced-sodium soy sauce

Heat toasted sesame oil in a large nonstick skillet over medium-high. Add eggs; cook 30 seconds or until scrambled, stirring constantly. Remove from pan. Heat toasted sesame oil in pan. Add chopped green onions and minced garlic cloves; sauté 1 minute. Add chopped kimchi, chicken and farro or rice; sauté 4 minutes. Gradually add fresh spinach, stirring until spinach wilts. Stir in thawed frozen green peas, kimchi juice, soy sauce, and eggs.
