Leftover Lentil Salad
- 1 bag organic arugula
- 1 bag shredded carrots
- 1 bag of steamed lentils
- Red onion
- 1 jar Trader Joe’s Sliced Sun Dried Tomatoes in Olive Oil
Fold half of arugula, half of sun-dried tomatoes, half of chopped red onion, and half of shredded carrot into the half of the lentils. Drizzle with olive oil, lemon, salt, and pepper.
