Southwestern Farro Salad
- 1 bag organic arugula
- 1 bag shredded carrots
- 1 avocado
- 1 bag of Trader Joe’s 10-Minute Farro
- 1 can of black beans
Mix the half cooked farro with half of arugula, black beans, half of shredded carrot, and the avocado half. Drizzle with olive oil, lime juice, salt, and pepper.
