Recipe | Easter Basket Sweet Treats

I love People magazine.

Random, I understand, and seemingly unrelated to a recipe post. HOWEVER, in 2014 I saw the cutest post for an Easter cake. I saved it and this year used it as my inspiration to create a super-cute treat for my office.

The key ingredient to the treat’s awesomeness is the candy grass. Soooooo much easier than dyeing dried coconut. You can get the grass in a variety of colors on Amazon via this link. The flavor isn’t anything to write home about – it’s edible but not exciting.

How it makes your treat look? Now that’s exciting.

I simply made lemon cake and baked it as mini-muffins in my mini-Bundt cake pan. I topped each treat with a light coat of whipped frosting, then dipped into the candy grass (snipped into small pieces). I topped each cupcake with a Cadbury’s chocolate malt egg.

Super cute and super easy. In my book, that makes it PERFECT.
