Recipe | Chocolate Coconut Drops

Sorting through the pantry, I found 2 squares of Bakers Unsweetened Chocolate and figured it was high time to put it to use. Call this a random pantry clear-out treat opportunity.

Chewy Chocolate Coconut Drops

  • 2 squares Baker’s Unsweetened Chocolate
  • 1 stick butter
  • 1 c sugar
  • 2 eggs
  • 1 t vanilla
  • 1-1/4 c flour
  • 1/3 c shredded coconut

Microwave chocolate and butter in large microwave-safe bowl until butter is melted. Stir until chocolate is completely melted. Add sugar and mix well. Blend in eggs and vanilla. Stir in flour (do not overmix). Carefully fold in coconut. Refrigerate 1 hour or until dough is easy to handle. Shape into 1-inch balls, place 2 inches apart on baking sheet. Bake at 350F for 8 minutes or until just set. Let stand on baking sheet for 1 minute, then transfer to wire rack to cool completely.
