Food Friday: Simple Tasty Hoisin Chicken Stir Fry

This was a quick-and-easy dinner – Kelly and I are biiiiig fans of those, you may have noticed.

What you need:

  • Meat from a rotisserie chicken (about 1.5 cups)
  • Broccoli slaw
  • 3 T. hoisin sauce
  • Chopped peanuts

Heat up a small amount (1/2 T at most) of stir fry oil in a wok. Add broccoli slaw, chicken and hoisin sauce and cook for 2-3 minutes. Serve over rice or – even better – over a Trader Joe’s scallion pancake. (We are seriously addicted to those things). Top with a sprinkling of chopped peanuts. Optional: Beat any kitties who try to steal your food.
