Food Friday: Skinny Seven-Layer Dip

Flashback to Super Bowl Sunday. A day spent without company and without a party, unless you count the furbabies and Jasper’s propensity to be a fuzzy party in a box. (That boy is outrageous!)

We were alone, but that didn’t mean we weren’t prepared to live tweet our reaction to commercials, cheer for Peyton Manning and eat really amazing Super Bowl Food.

Except, of course, who wants to put on amazing Super Bowl Food pounds? Not us.

That’s why we slimified the always-tasty Seven Layer dip into something that wouldn’t kill us but still tasted great.

Skinny Seven Layer Dip

Layer ingredients in this order:

  • 1/2 lb ground turkey, cooked and seasoned with taco seasonings
  • 1/2 can of non-fat vegetarian refried beans
  • 1/2 c. fat-free sour cream
  • Shredded iceberg lettuce
  • Pico de gallo
  • Chopped green onions
  • 1/4 c. low-fat Mexican cheese

Serve with baked tortilla chips and celery for dipping.
