Quinoa: A Healthy “Mac” and Cheese

I love mac and cheese – and I make a killer version, too. But I found a version that’s super yummy, healthy and Boy-approved.

Quinoa “Mac” and Cheese
  • 1 1/2 c quinoa, rinsed and drained
  • Seasoned salt (to taste)
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1 cup non-fat milk
  • 2 c grated Cheddar cheese
  • Panko bread crumbs

Cook quinoa to packaged instructions until fully cooked. Preheat oven to 350 F. Coat 13×9 inch dish with cooking spray.Whisk together eggs and milk in large bowl. Fold in quinoa mixture, seasoned salt and cheese. Stir well. Transfer to baking dish and top with panko crumbs. Bake 30-35 mins, until topping is browned.

This will make six large servings and – believe it or not – there are just 339 calories per serving!
