What do you get when you mix a Southern salmon cake with sushi?

Wonderfulness in your mouth, that’s what.

Mix up a can of salmon (boneless skinless if you are easily revolted, like me), an egg, a tablespoon of wasabi and 1/4 cup bread crumbs. Form into two patties.

Heat 1 tablespoon of olive oil in a skillet. Cook the salmon patties until nice and crusty on both sides (about 8 minutes).

Serve on toasted buns, spread with wasabi mayonnaise, arugula and pickled ginger.

Heaven. Pure flavor heaven.
